our story
Aloha, my name is Jackson Koorenhof and I want to welcome you to Trilogy Coffee. Trilogy has been tucked away in Kilauea’s historic stone building since 2017. I became the owner in 2025 and I couldn’t be more stoked.
I was born and raised here on the North Shore of Kaua’i and being able to share my love of coffee in the community I grew up in is a dream come true. I invite you to come stop by, have a chat and enjoy something delicious.

One of the cutest coffee shops I’ve been to in the world. The baristas were very kind and helpful. Almond latte was delicious. Decor and vibe of the entire shop was perfectly breezy and charming. Our favorite coffee stop throughout our whole tour of Hawaii. Can not recommend enough!

Easily the best coffee shop in Kauai. Despite farming coffee, Kauai is well behind the coffee renaissance on the mainland. The fact their baristas are passionate about coffee and can pull a shot, seals the deal. Jonesing for a good cup of coffee while on the island? Make the trek here!

One of the best cappuccinos I’ve ever had. Seriously. So good. If you are vegan or vegetarian, this spot is for you. If not, like me, it’s still for you! The cute outdoor seating area is perfect for a chat or a book over tasty coffee. Highly recommend!

This is probably the best espresso serving establishment on the island, and maybe in all of Hawai'i (I've tried a lot). The flavor is deep and rich, the texture is smooth but with enough weight, and the art is expertly done. The baristas are very nice as well!

Gorgeous location, elegant and classy coffee shop, great coffee and amazing vegan , raw and gluten free snacks .. we loved it so much here that even when we relocated to the south side, we couldn’t stop but coming by ! We will back next year ! Thank you!

What a lovely new place in town. They have a bunch of fancy chocolates for sale and an amazing vibe. The coffee may be the best on island. The chai is REAL chai. Not the stuff out of a carton that the other places make. Delicious! Give it a try. You will be surprised.
